CHICKEN AND BROCCOLI STIR FRY

INGREDIENTS

Better than takeout! Tender chicken breast and crispy broccoli in a sweet and savory sauce, served with sticky rice.

CHICKEN MARINADE

  • 1 lb thinly sliced chicken breast
  • 1 tablespoon cornstarch
  • 1 tablespoon soy sauce
  • 1 tablespoon rice vinegar
  • 1 tablespoon grated garlic
  • 1 tablespoon grated ginger

SAUCE

  • 1 tablespoon soy sauce
  • 1 tablespoon teriyaki sauce
  • 3 tablespoons sweet chili sauce
  • 1 tablespoon sesame oil
  • 1 teaspoon cornstarch

VEGETABLES

  • 2 medium broccoli heads, cut into small florets
DIRECTIONS

Step 1 — Mix the chicken with cornstarch, soy sauce, rice vinegar, garlic, and ginger. Set aside for 15 minutes.

Step 2 — Mix all sauce ingredients together and set aside.

Step 3 — On high heat, add 2 tablespoons oil to a pan and cook the chicken for 2-3 minutes. Transfer to a plate.

Step 4 — Add 2-3 tablespoons oil to the pan and cook the broccoli for 4-5 minutes.

Step 5 — Add the chicken and sauce back to the pan with the broccoli. Stir for another minute until everything is coated and heated through.

Step 6 — Serve with sticky rice.
