MOTHER'S GREEN SALAD

INGREDIENTS

Make this easy 7UP Lime Jello Salad for everything from summer picnics to holiday gatherings. It makes a great side dish or dessert. Use sugar free pudding and diet soda if you'd like to lower the calories.

  • 2 cups water
  • 6 ounces lime Jello (or any lime gelatin)
  • 6 ounces cream cheese (softened)
  • 2 cups 7Up soda
  • 1 package Dream Whip (prepared according to package directions)
  • 8 ounces crushed pineapple, drained (1 small can)
DIRECTIONS

Step 1 — Heat the water to boiling in the microwave or in a saucepan on the stovetop over medium heat. Once the water is boiling, place it in a large mixing bowl.

Step 2 — Dissolve the jello powder in the boiling water. Whisk well.

Step 3 — Add the softened cream cheese to the hot Jello mixture. Use a hand mixer to mix until the cream cheese has melted in.

Step 4 — Add the 7up and stir. Chill in the refrigerator for 60-90 minutes or until partially set.

Step 5 — Prepare Dream Whip according to the package directions. Fold the Dream Whip into the Jello.

Step 6 — Stir in the drained pineapple.

Step 7 — Pour into a 3 quart baking dish and chill until firm (at least 3 hours, depending on pan size and depth).

Step 8 — Top with whipped cream (or Cool Whip) and a cherry when serving.

TIPS
  • Use lemon Jello if you'd like a different flavor variation.
  • Other additions might be 1 cup miniature marshmallows, sliced bananas or even chopped pecans.
  • The calories shown are based on the recipe serving 12, with 1 serving being 1/12 of the Jello.
